Italian salad



This is an amazing mouth watering and refreshing salad which can be eaten with the meals, as an appetizer or as a snack between the meals. Parsely is rich in many vital vitamins, including vitamin C, B 12, K and A. This means parsley keeps your immune system strong, tones your bones and heals the nervous system, too.
Bell peppers also have lots of fiber and hydrating liquid. They are rich in vitamin C for healthy skin tissue.
Lettuce: This green is high in fiber and liquid for a healthy digestive tract.

Natural olive products are said to help protect us from heart disease, and also keep our digestive tract happy.

Serves 4 Persons
Preparation Time 20 minutes
Cooking Time 5 minutes

For the dressing:

1 cup loosely packed fresh parsley, roughly chopped
10 to 12 big leaves of fresh basil
1/4 tsp dried oregano
2 cloves garlic peeled and crushed
2 tbsp red or white vinegar
3 tbsp extra virgin olive oil
salt to taste
1/4 tsp black pepper powder
1 tbsp honey

For the salad:

2 cups of roughly cut romaine lettuce washed and pat dried by a kitchen towel
1 medium sized red bell pepper chopped
1 medium sized yellow bell pepper chopped
2 small cucumbers chopped
1 large carrot peeled into ribbons
8 to 10 cherry tomatoes cut into halves
10 to 12 pitted green olives
10 to 12 pitted black olives
1/4 cup of feta cheese cut into small cubes



For the dressing:

1.Add all the ingredients into a blender and blend the mixture into a smooth and runny paste.
2. Transfer it to a small bowl. Add olive oil if it is too thick.
3. Add more salt or vinegar according to your taste.

For the salad:

1.Take a large bowl and mix all the chopped vegetables into it.
2. Refrigerate the salad if it has to be served later without mixing the dressing.
3. Just before serving add 3/4 of the dressing and mix well.
4. Transfer the salad into the serving bowl.
5. Add feta cheese on top.
6. Serve it with the remaining dressing on the side.


1. The vegetables in the salad can be added or removed according to your taste and availability.
2. The quantity of the ingredients in the dressing can be altered according to your choice.
3. The dressing should be added just before serving the salad in order to keep it fresh as the salt in the dressing will make the vegetables loose water.
4. The lettuce leaves should be made dried after washing in order to keep the salad dry.
5. The salad can be eaten with the meals, as an appetizer or as a snack between the meals.
6. You can also add fresh tuna or grilled chicken pieces to the salad.
