Chana Chaat (Chick Peas)

Chana chaat goes well with the evening tea especially when you have guests over or you are relaxing with your family. It can be prepared with many combinations but nothing can beat our traditional style. This recipe is created for all the chaat lovers keeping in mind the healthiest ingredients possible. It is a mouthwatering snack and best for those who like spicy and tangy food.

For boiling the chick peas:

  • 1 cup of chick peas ( kabuli chana) 
  • Pinch of cooking soda ( sodium bicarbonate)
  • 6 cups of water for boiling

For chaat:

  • 2 cups of boiled or canned chick peas( I prefer home boiled ones)
  • 2 tbsp of canola or sunflower oil
  • 1 cup of chopped onions ( 2 medium sized)
  • 1 cup of chopped tomatoes ( 2 medium sized)
  • 2 thinly sliced green chillies ( deseed in order to avoid too spicy)
  • 2 tbsp tamarind chutney or tamarind paste or 2-3 tbsp lemon juice(according to the taste) 
  • 2 tbsp green chutney ( mint, coriander)
  • ½ tsp black salt
  • Salt to taste
  • ½ tsp roasted cumin powder
  • 1 ½ tsp chaat masala
  • 1 tsp chana masala ( optional)
  • ½ cup of stirred yogurt mixed with ¼ tsp of sugar and salt to taste. (optional)
  • Ingredients for garnishing
  • ¼ cup chopped green coriander leaves
  • ½ small thinly sliced onion
  • ½ small thinly sliced tomato
  • 1 green chilly
For boiling the chick pea:

  1. Wash 1 cup of chick peas and soak them for about 5 to 6 hours in water. Drain them and cook them in a pressure cooker with ½ tsp of salt, a pinch of soda and 6 cups of water. Boil for 20 minutes. Tip: (Keep 10 min on high flame and another 15 min on medium flame.) 
  2. Open the cooker when the steam has gone. Tip: (Check the chick pea if it is cooked or not by pressing 1 chick pea gently. A cooked one will be soft and presses easily.) 
  3. If it is cooked, strain it using a colander. Chick peas are ready to make into a chaat.

For preparing the chaat:

  1. Heat oil in a broad nonstick pan or thick kadai. Add chopped onions. Sauté for 5 min. on high flame.
  2. Once the onion turns soft add chopped tomatoes and green chillies. Sauté them also on high heat for 2 to 3 min. 
  3. Add the chick peas and all the other ingredients quickly except the coriander leaves and yogurt(optional which can be mixed well just before serving)
  4. Mix them well on medium heat. Taste to balance salt and sour according to your palette.
  5. Transfer them into a serving dish. 
  6. Garnish it with freshly chopped coriander leaves, green chillies and thinly sliced onions or tomatoes or both.

  • In order to make chana/chick pea salad just mix all the ingredients in a bowl and serve cold.
