Fried vegetable/peas rice

Fried vegetable rice is a quick and tasty rice dish prepared by cooked rice, green peas, other vegetables of your choice and spices. The healthier alternatives of white rice are red rice and brown basmati rice. It tastes well with plain yogurt or raitas(various yogurt preparations).

for cooking the rice: 

  • ½ cup long grained white/brown basmati or red rice
  • 1 cup of water
  • 1 tsp of canola oil

for fried rice

  • 2   cups of cooked rice
  • 1 onion chopped
  • 1 green chilly finely chopped
  • ½ cup frozen green peas or frozen vegetables (defrost them)
  • 3 tbsp of canola oil or any other cooking oil
  • 2 bay leaves
  • ½ tsp of cumin seeds
  • A pinch of asafetida powder
  • ½ tsp turmeric powder
  • 1tsp coriander powder
  • 1tsp dry mango powder/amchur or 1tbsp of lemon juice
  • ¼ tsp garam masala powder
  • green coriander leaves chopped
for the rice: 

  1. Wash ½ cup of brown/white or red rice.
  2. Add 1 cup of water
  3. Soak for 15-20 min.
  4. Cook on high flame till the water starts boiling without the cover. (approx. 5 min.)
  5. Lower the flame and cover the lid until the rice is cooked. Remember to check by pressing a grain. If it’s soft then the rice is done. Do not overcook. Each cooked grain should be separate.

for fried rice:

  1. Heat oil in a nonstick pan or thick kadai
  2. Add cumin seeds, bay leaves and asafetida
  3. When the cumin seeds turn little brown, add chopped onions and saute them until they turn light pink. (approx. 5 min.)
  4. Add turmeric powder, coriander powder, green chillies, peas or mixed vegetables and saute them for a min. on medium flame.
  5. Add rice and mix everything well for another 5 min.
  6. Finally add dry mango powder/amchur or lemon juice, garam masala and green coriander leaves.
  7. Serve hot or keep it in a casserole for later use.

  • This rice recipe can be prepared with leftover rice and any fresh or frozen vegetables available.
