Tava roti/phulka/chapati is the main bread for North Indians. It goes well wih curries, lentils/daals and vegetables. It is healthy and light on stomach as it is made up of wholemeal/wholewheat flour. We can also use it as a wrap with variety of fillings. Whole-grain whole wheat flour is a full-flavored flour containing vitamins, minerals and protein. Whole meal flour is more nutritious than refined white flour. Whole grain is a good source of calcium, iron, fiber and other minerals like selenium.

- 3 cups of wholemeal flour/ata
- 1 ¼ cup of water
- ½ tsp of salt (optional)
- ¼ tsp of oil or pure ghee
- Take wholemeal flour/ata in a big and broad bowl.
- Add salt and mix well.
- Now dig a well in the centre. Pour half of the water and knead it. Keep adding the remaining water and knead it into a soft smooth dough using both the hands. Make sure no knots or lumps are there.
- Add the oil or ghee to the bowl and roll the dough in it to make it non sticky.
- Cover it with a wet cloth or a lid and keep aside for 5 min.
- Divide the dough into 16-18 equal portions. Make balls using flour for dusting.
- Roll the ball using a rolling pin and dust it in between with the flour.
- Roll the ball evenly into an 18-20cm diameter circle.
- Meanwhile heat the flatten griddle/tava. Transfer this flattened dough circle onto the tava.
- Wait for 2 min. and flip it. Wait for another 1 min.
- Now transfer it onto the open flame and keep on flipping it twice from both sides using a tong.
- Make sure it is soft and has golden brown spots on both sides. Do not burn it.
- Roti/chapatti/phulka is ready to serve with any curry, lentil or vegetable.
- Step 11 in the method can also be done by letting the roti stay on the tava. Keep pressing and rotating the roti on both sides using a thick cloth.
- Same dough can be used to make plain or stuffed paranthas. ( Indian bread cooked with oil or ghee on the flat griddle/tawa)
- Puris can be made with the same recipe. Just remember to knead the dough with a little less water to make the dough tighter. We can add chilli powder, cumin seeds or carom seeds to make masala puris. (spicy deep fried bread)
