Chinese stir fried vegetable noodles

These noodles look and taste amazing. My hubby prepares them following this recipe and that is an off day for me from cooking. Cool! We all relish them with vegetable Manchurian balls with gravy. We mostly end up overeating. Yummmmmm………..

For boiling the noodles:

  • 1 packet wholewheat/plain noodles or spaghetti)
  • 12 cups water 
  • 1tbsp cooking oil
  • Salt to taste

For stir frying the noodles:

  • 1 carrot cut into 2 inches long thin strips
  • ¼ small cabbage coarsely shredded
  • 1 medium onion thinly sliced
  • 1 medium capsicum thinly sliced
  • 1 small coloured pepper thinly sliced
  • 4 scallions (spring onions) cut into small pieces
  • 7-8 tbsp of cooking oil
  • 3tbsp soya sauce
  • 3tbsp white vinegar
  • 1 tbsp schezwan sauce
  • ½ tsp white pepper powder
  • ½ tsp black pepper powder
  • ½ tsp chilli flakes (if wanted extra hot noodles)
For boiling the noodles:

  1. Heat water in thick, wide and deep vessel.
  2. Add noodles, salt and oil. 
  3. Let the noodles boil for 20 min. Check by taking out one noodle with a help of a fork. Cut it into two parts and see if it is soft from the inside also.
  4. If cooked then drain the noodles into a colander. Run cold water through them. Shake the colander so that the noodles do not stick to each other.
  5. Keep them aside.

For stir frying the noodles:

  1. Heat 3 tbsp of oil in a thick pan.  Saute first onion and carrot for 2 min on high flame. Stir in the remaining vegetables except scallions. Toss them all for another 4-5 min.
  2. Heat the remaining 5 tbsp of oil in a large wok. Add boiled noodles, all the sauces, white vinegar, sautéed vegetables, white and black pepper along with salt and stir fry them on high heat.
  3. Toss them well using two spatulas. Garnish them with chopped scallions.
  4. Serve these hot and yummilicious noodles with any Chinese side dish of your choice. 

  • While the noodles are boiling the vegetables can be chopped in order to save time.
  • You can add or remove any vegetables of your choice to give it your touch.
  • You can use any type of noodles but I prefer wholewheat spaghetti for health and taste reasons.
  • Non vegetarians can add mince chicken while stir frying the vegetables. Make sure the chicken is cooked properly.
