This refreshing summer salad is quick and easy to make. It is very versatile with respect to the ingredients used and great in taste and health.

- 1/2 cucumber cubes
- 1/2 tomato cubes
- 1/4 cup of broccoli florets
- 1/4 cup of capsicum cubes
- 1/4 cup of diced cabbage
- 1 tbsp of lemon juice
- 1 tsp of olive oil (optional)
- 2 tbsp of mixed seeds and dried berries(mix of pumpkin seeds, melon seeds, sunflower seeds, goji berries, dried blue berries, or any other dried berries of your choice)
- salt to taste
- 1/4 tsp of coarsely crushed pepper
- Mix all the cut vegetables in a bowl.
- Add lemon juice, olive oil, crushed pepper.
- Keep in the refrigerator.
- Add salt and sprinkle seed berry mix just before serving.
- You can add or remove any vegetable of your choice in this salad.
- The berry seed mix is available in many supermarkets or can be made at home with the available seeds and dried berries.
- Mint leaves can be added for more refreshing taste. (cilantro or parsley can also be used in place of mint leaves)
